Soft Pretzels
Ingredients:
270 ml of luke warm water
3 tablespoon of baking soda
50 g of butter, melted
1 package active dry yeast (25 g)
500 g flour
12 g of salt
Pretzel salt
12 g of light brown sugar
Put the flour in a large bowl. Combine 50 ml
of water, the sugar and crumbled yeast on
the top. Allow to rise for 10 minutes or
until mixture has doubled in size.
Dissolve 12 g of salt in the lukewarm water,
combine water and melted butter with the rest
and mix all with your hands until to obtain a
soft but not sticky dough.
Cover the dough with plastic wrap and sit in
a warm place for an hour or until it has
doubled in size. Knead the dough again then
and divide into 8 equal pieces.
Roll out each piece into a 50 cm of length
rope. Make a U-shape with the rope, holding
the ends of the rope, cross them over each
other and press onto the bottom of the U
in order to form the shape of a pretzel.
Place them on a flour sprinkled dishclouth and
let them rise for another 20 minutes.
In the meantime bring to boil 250 ml of water,
add 3 tablespoon of baking soda.
Place the pretzels into the boiling water,
1 by 1, for 30-40 seconds, until shiny.
Remove them from the water using a large flat
spatula.Let them dry on the dischclouth.
Preheat the oven to 220°C. Place the pretzel
on the baking sheet, lined with baking paper,
well spaced.
Sprinkle with pretzel salt and bake pretzels
for 20 minutes, until brown.
Pretzel morbidi
Ingredienti
270 ml acqua tiepida
3 cucchiai bicarbonato
50 g burro morbido
1 pacchetto di lievito di birra (25 g)
500 g farina
12 g sale
Fiocchi di sale
12 g zucchero di canna , chiaro
Versate una ciotola capiente la farina:
al centro mettete il lievito di birra
sbriciolato, lo zucchero, 50 ml di acqua
tiepida e una piccola quantità di farina.
Create un composto morbido.
Lasciate lievitare in un luogo tiepido.
Aggiungete il burro ammorbidito.
Salate l’acqua tiepida avanzata e poco
alla volta versate sul composto.
Impastate con le mani fino ad ottenere
un composto morbido ma non appiccicoso.
Coprite la ciotola con un canovaccio
e lasciate lievitare per un'ora in un
luogo tiepido.Quando l'impasto sarà
lievitato impastate di nuovo il composto.
Dividete l'impasto in otto parti uguali e
formate degli cordoncini lunghi 50 cm
circa, lasciando le estremità più strette.
Date al cordoncino la tipica forma del
pretzel. Appoggiateli su un canovaccio
infarinato e lasciate lievitare per altri
20 minuti. Nel frattempo fate bollire
250 ml d'acqua, e quando avrà raggiunto il
bollore, aggiungete 3 cucchiai di bicarbonato.
Con una schiumarola, fate scivolare i pretzel,
uno alla volta, in acqua fino a che non
saranno lucidi (30 -40 secondi).
Scolateli, appoggiateli su un canovaccio per
togliere l'acqua in eccesso.
Disponeteli poi su una teglia ricoperta di
carta da forno, cospargeteli di fiocchi di
sale grosso.Infornate i pretzel per 20 minuti
o fino che non diventano bruni.
